The Philosophy behind the Wine at Lacey Estates Winery
When it comes to their wine philosophy at Lacey Estates Winery, Kimball Lacey believes that great wines start in the vineyard.
They focus on growing high-quality grapes from old vines which are then used to craft their one-of-a-kind wines.
Kimball takes a holistic approach to winemaking that focuses on sustainable practices as well as minimal intervention techniques.
In addition to this approach, winemaker Kimball Lacey also focuses on utilizing natural yeast fermentation as well as extended maceration periods in order to create truly unique flavors in their wines.
All these methods combined with the Hillier clay loam soils help create some of the most unique wines in all of Ontario!

The Grape Varieties Grown at Lacey Estates Winery
At Lacey Estate’s winery, they grow their own grape varieties including Pinot Noir and Riesling.
Other lesser-known Chardonnay varietals like the newly released Inox Chardonnay.
All of these grapes are grown sustainably with minimal interference from Kimball or his team.
Once the grapes are harvested they are carefully sorted before being processed for making into different kinds of wines.
Whether it be skin-fermented Gewurztraminer or full-bodied Chardonnays each bottle is crafted with care using only the best ingredients available from their vineyard estate!
